A hearty and flavorful chili made easy in a crock pot slow cooker. Perfect for a cozy meal with tender beans, ground beef, and a rich blend of spices.
Ingredients
1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
1 cup beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1 tablespoon olive oil
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until softened, about 3-4 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Add ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Drain excess fat from the skillet.
Transfer the cooked beef, onions, and garlic to the crock pot slow cooker.
Add kidney beans, black beans, diced tomatoes, tomato sauce, and beef broth to the slow cooker.
Stir in chili powder, ground cumin, paprika, dried oregano, salt, black pepper, and crushed red pepper flakes until well combined.
Cover and cook on low for 6 hours.
Stir the chili before serving and adjust seasoning if needed.
