A comforting and creamy dairy free white chicken chili made effortlessly in the slow cooker. Packed with tender chicken, white beans, green chilies, and warming spices, this chili is perfect for a cozy meal without any dairy.
Ingredients
1 pound boneless skinless chicken breasts
1 medium yellow onion, diced
3 cloves garlic, minced
2 cans (15 ounces each) great northern beans, drained and rinsed
1 can (4 ounces) diced green chilies
4 cups low sodium chicken broth
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Salt, to taste
Freshly ground black pepper, to taste
1/4 cup chopped fresh cilantro, for garnish
1 tablespoon olive oil
Instructions
Turn the slow cooker on to low heat.
Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
Add minced garlic to the skillet and cook for 1 minute until fragrant. Remove from heat.
Place the chicken breasts in the bottom of the slow cooker.
Add the sautéed onion and garlic over the chicken.
Add the drained and rinsed great northern beans and diced green chilies to the slow cooker.
Pour in the chicken broth.
Sprinkle cumin, oregano, chili powder, ground coriander, cayenne pepper, salt, and black pepper evenly over the ingredients in the slow cooker.
Cover and cook on low for 6 hours, or until the chicken is fully cooked and tender.
Remove the chicken breasts from the slow cooker and shred them using two forks.
Return the shredded chicken to the slow cooker and stir to combine.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve the chili hot, garnished with chopped fresh cilantro.
