A hearty and flavorful one-pan dinner featuring turkey sausage sautéed with bell peppers, onions, zucchini, and cherry tomatoes, seasoned with garlic and Italian herbs. Perfect for a quick and nutritious weeknight meal.
Ingredients
1 pound turkey sausage links, sliced into 1/2-inch pieces
1 tablespoon olive oil
1 medium yellow onion, sliced
3 cloves garlic, minced
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat.
Add the sliced turkey sausage to the skillet and cook for 5 to 7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set aside.
In the same skillet, add the sliced onion and cook for 3 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the red and yellow bell peppers and zucchini to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender-crisp.
Return the cooked turkey sausage to the skillet and add the cherry tomatoes, dried Italian seasoning, salt, and black pepper. Stir to combine and cook for an additional 2 to 3 minutes until the tomatoes soften.
Remove from heat and sprinkle with chopped fresh parsley before serving.
