Air Fryer Salmon with Quinoa

Description

A healthy and delicious meal featuring perfectly cooked air fryer salmon served alongside fluffy quinoa, making for a quick and nutritious dinner.


Ingredients

2 salmon fillets, skin on, about 6 ounces each
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 cup quinoa, rinsed
2 cups water
1/4 teaspoon salt
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley


Instructions

Preheat the air fryer to 400°F (200°C).
In a small bowl, mix olive oil, salt, black pepper, garlic powder, and paprika.
Brush the salmon fillets evenly with the olive oil mixture on all sides.
Place the salmon fillets skin-side down in the air fryer basket, making sure they do not overlap.
Cook the salmon in the air fryer for 10 to 12 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
While the salmon cooks, combine the rinsed quinoa, water, and 1/4 teaspoon salt in a medium saucepan.
Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and water is absorbed.
Remove the quinoa from heat and let it sit covered for 5 minutes, then fluff with a fork.
Stir in the fresh lemon juice and chopped parsley into the quinoa.
Serve the air fryer salmon fillets over a bed of lemon parsley quinoa.
