Description

Crispy, high-protein chicken fries made with lean chicken breast and a flavorful coating. Perfect as a healthy snack or meal accompaniment.

1 pound boneless, skinless chicken breast
1/2 cup plain nonfat Greek yogurt
1 large egg
1 cup whole wheat panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil


Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Cut the chicken breast into strips approximately 1/2 inch wide and 3 inches long to resemble fries.
In a medium bowl, whisk together the Greek yogurt and egg until smooth.
In a separate shallow bowl, combine the whole wheat panko breadcrumbs, grated Parmesan cheese, garlic powder, smoked paprika, onion powder, salt, and black pepper.
Dip each chicken strip into the yogurt and egg mixture, allowing excess to drip off, then coat thoroughly with the breadcrumb mixture. Place the coated chicken fries on the prepared baking sheet in a single layer.
Drizzle the olive oil evenly over the coated chicken fries to help them crisp up during baking.
Bake in the preheated oven for 18 to 20 minutes, flipping the fries halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Remove from the oven and let cool for 2 minutes before serving.
