2 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
4 large eggs

Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a medium bowl, toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 12 minutes, shaking the basket halfway through to ensure even cooking and crispiness.
After 12 minutes, create four small wells in the potatoes in the air fryer basket.
Spray the wells lightly with cooking spray to prevent sticking.
Crack one egg into each well carefully.
Cook for an additional 3 minutes at 400°F (200°C), or until the egg whites are set and yolks reach your desired doneness.
Use a spatula to carefully remove the potato and egg mixture from the air fryer basket.
Serve immediately while hot.
