A comforting and nutritious casserole combining tender chicken, fresh broccoli, and cauliflower baked in a creamy cheese sauce. Perfect for a hearty family dinner.
Ingredients
2 cups cooked chicken breast, shredded
2 cups broccoli florets, chopped
2 cups cauliflower florets, chopped
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream
1/2 cup mayonnaise
1/2 cup chopped yellow onion
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
2 tablespoons olive oil
1/2 cup crushed buttery crackers (such as Ritz) for topping
Instructions
Preheat the oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Add the broccoli and cauliflower florets and cook for 3-4 minutes until just tender. Drain and set aside.
Heat olive oil in a medium skillet over medium heat. Add the chopped onion and minced garlic and sauté for 3-4 minutes until softened.
In a large mixing bowl, combine the cooked chicken, blanched broccoli, cauliflower, sautéed onion and garlic, sour cream, mayonnaise, chicken broth, shredded cheddar cheese, shredded mozzarella cheese, salt, black pepper, and dried thyme. Mix well until all ingredients are evenly incorporated.
Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
Sprinkle the grated Parmesan cheese evenly over the top, followed by the crushed buttery crackers.
Bake uncovered in the preheated oven for 35-40 minutes, or until the casserole is bubbly and the topping is golden brown.
Remove from the oven and let it rest for 5 minutes before serving.
