Description

A hearty and comforting ground beef dinner with tender orzo pasta, simmered in a flavorful tomato sauce with aromatic vegetables and herbs. Perfect for a quick and satisfying weeknight meal.


Ingredients

1 tablespoon olive oil
1 pound ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
1 cup orzo pasta
1 can (14.5 ounces) diced tomatoes, undrained
2 cups beef broth
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly.
Add the diced tomatoes with their juice, beef broth, dried oregano, dried basil, and crushed red pepper flakes to the skillet. Stir to combine.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the orzo is tender and has absorbed most of the liquid.
Season with salt and black pepper to taste.
Remove from heat and stir in the grated Parmesan cheese.
Sprinkle chopped fresh parsley over the top before serving.
