A creamy and comforting chicken broccoli casserole that’s easy to prepare and perfect for a family dinner. Tender chicken, fresh broccoli, and a cheesy sauce baked to golden perfection.
Ingredients
3 cups cooked chicken, shredded or diced
4 cups fresh broccoli florets
1 cup white long grain rice, uncooked
2 1/2 cups chicken broth
1 cup sour cream
1 can (10.5 ounces) condensed cream of mushroom soup
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 medium onion, finely chopped
2 cloves garlic, minced
2 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Instructions
Preheat the oven to 350°F (175°C).
In a medium saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic and sauté until the onion is translucent, about 3-4 minutes.
In a large mixing bowl, combine the cooked chicken, fresh broccoli florets, uncooked rice, chicken broth, sour cream, cream of mushroom soup, sautéed onion and garlic, salt, black pepper, and paprika. Stir until all ingredients are evenly mixed.
Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
Sprinkle the shredded cheddar and mozzarella cheeses evenly over the top of the casserole.
Cover the baking dish with aluminum foil and bake in the preheated oven for 35 minutes.
Remove the foil and bake uncovered for an additional 5 minutes or until the cheese is melted and bubbly.
Remove from the oven and let the casserole rest for 5 minutes before serving.
