A quick and flavorful Cajun shrimp and vegetable dish cooked to perfection in the air fryer. This recipe combines spicy Cajun seasoning with fresh shrimp and crisp vegetables for a healthy, delicious meal ready in under 30 minutes.
Ingredients
1 pound raw shrimp, peeled and deveined
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow bell pepper, cut into 1-inch pieces
1 medium zucchini, sliced into 1/2-inch thick half-moons
1 medium red onion, cut into 1-inch pieces
2 tablespoons olive oil
2 teaspoons Cajun seasoning
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large mixing bowl, combine the shrimp, red bell pepper, yellow bell pepper, zucchini, and red onion.
Add olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper to the bowl with shrimp and vegetables.
Toss everything together until shrimp and vegetables are evenly coated with the seasoning and oil.
Place the shrimp and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches to avoid overcrowding.
Air fry at 400°F (200°C) for 10 minutes, shaking the basket halfway through cooking to ensure even crisping.
Check that the shrimp are opaque and cooked through and the vegetables are tender-crisp.
Remove from the air fryer and drizzle with fresh lemon juice.
Garnish with chopped fresh parsley before serving.
