Description
A quick and flavorful Mediterranean-inspired salmon recipe cooked to perfection in the air fryer. This dish features tender salmon fillets seasoned with garlic, lemon, and herbs, topped with a fresh tomato and olive salsa.
Ingredients
2 salmon fillets, skin on, about 6 ounces each
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, zested and juiced
1/2 cup cherry tomatoes, quartered
1/4 cup Kalamata olives, pitted and sliced
2 tablespoons red onion, finely chopped
1 tablespoon fresh parsley, chopped
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a small bowl, combine olive oil, garlic powder, dried oregano, salt, black pepper, and lemon zest.
Pat the salmon fillets dry with paper towels. Brush the olive oil mixture evenly over both sides of the salmon fillets.
Place the salmon fillets skin-side down in the air fryer basket. Cook for 10-12 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
While the salmon cooks, prepare the Mediterranean salsa by combining cherry tomatoes, Kalamata olives, red onion, fresh parsley, and lemon juice in a small bowl. Stir gently to combine.
Once the salmon is cooked, carefully remove it from the air fryer and plate it.
Spoon the Mediterranean salsa over the top of each salmon fillet and serve immediately.
