A hearty and flavorful high protein beef chili packed with lean ground beef, beans, and spices. Perfect for a nutritious and satisfying meal.
Ingredients
1 tablespoon olive oil
1 pound lean ground beef (90% lean)
1 medium onion, diced
3 cloves garlic, minced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1 (14.5 ounces) can diced tomatoes, undrained
1 (15 ounces) can kidney beans, drained and rinsed
1 (15 ounces) can black beans, drained and rinsed
1 (8 ounces) can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup low sodium beef broth
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add lean ground beef to the pot and cook, breaking it apart with a spoon, until browned and no longer pink, about 6-8 minutes.
Drain excess fat from the pot if necessary.
Add diced green and red bell peppers to the pot and cook for 3-4 minutes until slightly softened.
Stir in chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper. Cook for 1 minute to toast the spices.
Add diced tomatoes with their juice, tomato sauce, kidney beans, black beans, and beef broth to the pot. Stir well to combine.
Bring the chili to a boil, then reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.
Taste and adjust seasoning if needed before serving.
