Ingredients
1 pound ground beef
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 medium red bell pepper, diced
1 cup mushrooms, sliced
1 teaspoon gluten-free chili powder
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup gluten-free beef broth
1 tablespoon tomato paste
2 tablespoons chopped fresh parsley
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
Drain any excess fat from the skillet.
Add the diced red bell pepper and sliced mushrooms to the skillet and cook for 4-5 minutes until vegetables are tender.
Stir in the gluten-free chili powder, ground cumin, smoked paprika, salt, and black pepper.
Add the tomato paste and gluten-free beef broth, stirring to combine.
Simmer the mixture for 5 minutes until slightly thickened.
Remove from heat and stir in the chopped fresh parsley.
Serve hot as a main dish or over gluten-free rice or vegetables.
