Description
A spicy and creamy casserole combining ground beef, jalapeños, cream cheese, and cheddar cheese for a flavorful twist on classic jalapeño poppers.
Ingredients
1 pound ground beef
1 medium onion, diced
3 jalapeños, seeded and finely chopped
3 cloves garlic, minced
8 ounces cream cheese, softened
1 cup sour cream
2 cups shredded sharp cheddar cheese, divided
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups crushed tortilla chips
2 tablespoons chopped fresh cilantro
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula, about 5-7 minutes.
Add the diced onion, chopped jalapeños, and minced garlic to the skillet. Cook until the onion is translucent and the jalapeños are softened, about 4-5 minutes.
Drain any excess fat from the skillet.
In a large mixing bowl, combine the softened cream cheese, sour cream, 1 cup of shredded cheddar cheese, smoked paprika, ground cumin, salt, and black pepper. Mix until smooth.
Add the cooked ground beef mixture to the cream cheese mixture and stir until well combined.
Transfer the mixture to a greased 9×13-inch casserole dish and spread evenly.
Sprinkle the crushed tortilla chips evenly over the top of the casserole.
Top with the remaining 1 cup of shredded cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Remove from the oven and sprinkle chopped fresh cilantro over the top before serving.
