Description
Crispy and golden vegan potato latkes made effortlessly in the air fryer. These latkes are perfect as a snack or side dish, using simple ingredients and no oil frying required.
Ingredients
4 medium russet potatoes, peeled and grated
1 small yellow onion, grated
1/4 cup chickpea flour
2 tablespoons ground flaxseed
6 tablespoons water
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon baking powder
Instructions
Place the grated potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible. Transfer to a large mixing bowl.
Grate the onion and add it to the bowl with the potatoes.
In a small bowl, combine the ground flaxseed and water. Stir well and let it sit for 5 minutes to thicken, creating a flax egg.
Add the chickpea flour, flax egg, salt, black pepper, and baking powder to the potato and onion mixture. Mix thoroughly until well combined.
Preheat the air fryer to 375°F (190°C) for 3 minutes.
Form the mixture into 8 equal-sized patties, about 3 inches in diameter and 1/2 inch thick.
Place the latkes in a single layer inside the air fryer basket. Do not overcrowd; cook in batches if necessary.
Air fry the latkes at 375°F (190°C) for 7 minutes. Carefully flip each latke and air fry for an additional 7-8 minutes until golden brown and crispy.
Remove the latkes from the air fryer and let them cool slightly before serving.
