Description

A moist and flavorful apple cake made without any added sugar, perfect for a healthy dessert or snack.


Ingredients

2 medium apples, peeled, cored, and diced
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 large eggs
1/2 cup unsweetened applesauce
1/4 cup plain Greek yogurt
1/4 cup melted coconut oil
1 teaspoon pure vanilla extract


Instructions

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
In a large bowl, beat the eggs. Add the unsweetened applesauce, plain Greek yogurt, melted coconut oil, and vanilla extract. Mix well until combined.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Fold in the diced apples evenly into the batter.
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
Transfer the cake to a wire rack to cool completely before serving.
