Description
A simple and flavorful slow cooker chicken recipe that is fully compliant with the Whole30 program. Tender chicken cooked with fresh herbs, garlic, and lemon for an easy and healthy meal.
Ingredients
4 bone-in, skin-on chicken thighs
1 medium lemon, sliced
4 cloves garlic, minced
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon paprika
2 tablespoons olive oil
1/2 cup chicken broth (Whole30 compliant)
Instructions
Pat the chicken thighs dry with paper towels.
In a small bowl, combine sea salt, black pepper, dried thyme, dried rosemary, and paprika.
Rub the spice mixture evenly over both sides of the chicken thighs.
Heat olive oil in a skillet over medium-high heat.
Sear the chicken thighs skin-side down for 3-4 minutes until the skin is golden brown. Flip and sear the other side for 2 minutes.
Place the seared chicken thighs into the slow cooker.
Add minced garlic and lemon slices on top of the chicken.
Pour the chicken broth into the slow cooker around the chicken thighs.
Cover and cook on low for 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
Remove the chicken from the slow cooker and let rest for 5 minutes before serving.
