Description

A comforting and hearty slow cooker soup that captures all the flavors of stuffed cabbage rolls without the hassle of rolling. This unstuffed cabbage soup is packed with ground beef, tender cabbage, and a savory tomato broth, perfect for an easy weeknight meal.

1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 medium head green cabbage, chopped (about 6 cups)
2 medium carrots, peeled and diced
2 stalks celery, diced
1 (14.5 ounce) can diced tomatoes with juice
1 (8 ounce) can tomato sauce
4 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil


Instructions

Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Add diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
Transfer the cooked beef, onion, and garlic mixture to the slow cooker.
Add chopped cabbage, diced carrots, diced celery, diced tomatoes with juice, tomato sauce, and beef broth to the slow cooker.
Stir in dried oregano, dried thyme, smoked paprika, salt, and black pepper until well combined.
Cover and cook on low for 6 hours, or until the vegetables are tender and flavors are well blended.
Stir the soup before serving and adjust seasoning with additional salt and pepper if desired.
