Description
A hearty and flavorful slow cooker taco soup packed with ground beef, beans, corn, and classic taco seasonings. Perfect for an easy weeknight dinner or casual gathering.
Ingredients
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can corn, drained
1 (14.5 ounce) can diced tomatoes with green chilies
1 (8 ounce) can tomato sauce
1 (1 ounce) packet taco seasoning
2 cups beef broth
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt, to taste
Black pepper, to taste
Instructions
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened, about 5-7 minutes.
Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
Drain any excess fat from the skillet and transfer the beef, onion, and garlic mixture to the slow cooker.
Add the black beans, kidney beans, corn, diced tomatoes with green chilies, tomato sauce, taco seasoning, beef broth, ground cumin, and chili powder to the slow cooker.
Stir all the ingredients together until well combined.
Cover the slow cooker and cook on low for 6 hours.
After cooking, season the soup with salt and black pepper to taste.
Stir the soup well before serving.
