Description

A hearty and flavorful slow cooker soup made with savory sausage, vegetables, and beans. Perfect for an easy and comforting meal.


Ingredients

1 pound Italian sausage, casings removed
1 medium onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and diced
2 celery stalks, diced
1 (14.5-ounce) can diced tomatoes with juice
1 (15-ounce) can cannellini beans, drained and rinsed
4 cups low-sodium chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
2 cups fresh spinach, chopped


Instructions

In a large skillet over medium heat, cook the Italian sausage, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes. Drain excess fat.
Transfer the cooked sausage to the slow cooker.
Add the diced onion, minced garlic, diced carrots, diced celery, diced tomatoes with juice, cannellini beans, chicken broth, dried oregano, dried basil, and crushed red pepper flakes to the slow cooker. Stir to combine.
Cover and cook on low for 6 hours, or until the vegetables are tender.
About 10 minutes before serving, stir in the chopped fresh spinach. Cook uncovered for an additional 10 minutes until the spinach is wilted.
Season the soup with salt and black pepper to taste.
Ladle the soup into bowls and serve warm.
