Ingredients
1.5 pounds boneless skinless chicken thighs
4 cups chicken broth
1 medium onion, diced
3 cloves garlic, minced
2 medium celery stalks, diced
2 medium carrots, diced
1 medium zucchini, diced
1 cup green beans, trimmed and cut into 1-inch pieces
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons olive oil
1/4 cup fresh parsley, chopped
Instructions
Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic and sauté for 3-4 minutes until softened.
Place the chicken thighs in the slow cooker.
Add the sautéed onion and garlic, diced celery, carrots, zucchini, and green beans to the slow cooker.
Pour the chicken broth over the ingredients in the slow cooker.
Add dried thyme, dried oregano, salt, and black pepper to the slow cooker. Stir gently to combine.
Cover and cook on low for 6 hours, or until the chicken is cooked through and vegetables are tender.
Remove the chicken thighs from the slow cooker and shred them using two forks.
Return the shredded chicken to the slow cooker and stir to combine.
Sprinkle chopped fresh parsley over the soup before serving.
