Description

A flavorful and tender slow cooker beef teriyaki recipe that combines savory soy sauce, sweet honey, and aromatic garlic and ginger for a delicious meal. Perfect served over steamed rice or with your favorite vegetables.

2 pounds beef chuck roast, cut into 1-inch cubes
1/2 cup soy sauce
1/4 cup honey
1/4 cup water
2 tablespoons rice vinegar
2 tablespoons brown sugar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon cornstarch
2 tablespoons cold water
2 green onions, thinly sliced (for garnish)
1 tablespoon sesame seeds (for garnish)


Instructions

Place the beef chuck roast cubes into the slow cooker.
In a medium bowl, whisk together soy sauce, honey, 1/4 cup water, rice vinegar, brown sugar, minced garlic, and grated ginger until well combined.
Pour the teriyaki sauce mixture over the beef in the slow cooker, stirring gently to coat all the beef pieces.
Cover and cook on low for 6 hours, or until the beef is tender and easily shredded with a fork.
About 15 minutes before serving, mix the cornstarch and 2 tablespoons cold water in a small bowl to create a slurry.
Stir the cornstarch slurry into the slow cooker to thicken the sauce.
Cover and cook on high for an additional 15 minutes until the sauce has thickened.
Serve the beef teriyaki over steamed rice or your choice of vegetables.
Garnish with sliced green onions and sesame seeds before serving.
