Ingredients

1.5 pounds beef stew meat, cut into 1-inch cubes
1 medium onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and sliced
2 celery stalks, sliced
2 medium potatoes, peeled and diced
1 (14.5-ounce) can diced tomatoes, undrained
6 cups beef broth
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon black pepper
1 teaspoon salt
1 bay leaf


Instructions

Place the beef stew meat into the slow cooker.
Add the diced onion, minced garlic, sliced carrots, sliced celery, and diced potatoes to the slow cooker.
Pour in the can of diced tomatoes with their juice.
Pour the beef broth over the ingredients in the slow cooker.
Add the dried thyme, dried parsley, black pepper, salt, and bay leaf to the slow cooker.
Stir gently to combine all ingredients.
Cover the slow cooker with the lid and cook on low for 8 hours, or until the beef is tender and the vegetables are cooked through.
Remove the bay leaf before serving.
Ladle the soup into bowls and serve hot.
