Description

Tender and flavorful slow cooker beef chunks simmered to perfection with aromatic vegetables and rich broth, perfect for a comforting meal.


Ingredients

2 pounds beef chuck, cut into 1.5-inch chunks
1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
3 medium carrots, peeled and sliced into 1/2-inch pieces
2 stalks celery, sliced into 1/2-inch pieces
1 cup beef broth
1/2 cup red wine
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt, 1 teaspoon
Black pepper, 1/2 teaspoon


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add beef chunks in batches and brown on all sides, about 3-4 minutes per batch. Transfer browned beef to the slow cooker.
In the same skillet, add chopped onion and cook for 3 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Transfer onion and garlic to the slow cooker.
Add sliced carrots and celery to the slow cooker.
Pour beef broth and red wine into the slow cooker.
Stir in tomato paste, dried thyme, dried rosemary, salt, and black pepper.
Add the bay leaf.
Cover and cook on low for 6 hours, or until beef is tender.
Remove bay leaf before serving.
