Ingredients

1 pound beef chuck roast, thinly sliced against the grain
3 cups broccoli florets
1 cup beef broth
1/3 cup low sodium soy sauce
1/4 cup brown sugar, packed
3 cloves garlic, minced
1 tablespoon sesame oil
1 tablespoon cornstarch
2 tablespoons water
1 teaspoon grated fresh ginger
1/4 teaspoon crushed red pepper flakes


Instructions

Place the thinly sliced beef chuck roast into the slow cooker.
In a medium bowl, whisk together beef broth, soy sauce, brown sugar, minced garlic, sesame oil, grated fresh ginger, and crushed red pepper flakes until combined.
Pour the sauce mixture over the beef in the slow cooker, stirring gently to coat the beef evenly.
Cover and cook on low for 3 hours.
After 3 hours, add the broccoli florets to the slow cooker and stir to combine.
Cover and cook on low for an additional 1 hour, or until the broccoli is tender and the beef is cooked through.
In a small bowl, mix cornstarch and water to create a slurry.
Stir the cornstarch slurry into the slow cooker and cook on high for 10-15 minutes until the sauce thickens.
Serve the beef and broccoli hot over steamed rice or noodles if desired.
