A budget-friendly, hearty ground beef dinner featuring seasoned ground beef with vegetables and rice, perfect for an easy weeknight meal.
Ingredients
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup long grain white rice
2 cups beef broth
1 cup frozen mixed vegetables (carrots, peas, corn)
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon dried oregano
Instructions
Heat the vegetable oil in a large skillet over medium heat.
Add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet. Break it apart with a spoon and cook until browned and no longer pink, about 6-8 minutes.
Season the beef mixture with salt, black pepper, paprika, and dried oregano. Stir to combine.
Add the rice to the skillet and stir well to coat it with the beef and seasonings.
Pour in the beef broth and bring the mixture to a boil.
Reduce heat to low, cover the skillet, and simmer for 15 minutes.
After 15 minutes, add the frozen mixed vegetables to the skillet. Stir to combine, cover again, and cook for an additional 5 minutes until the rice is tender and the vegetables are heated through.
Remove from heat and let the dish sit covered for 5 minutes before serving.
