Description

A quick and easy sheet pan meal featuring crispy gnocchi, savory chicken sausage, and roasted vegetables all baked together for a delicious and satisfying dinner.

1 pound potato gnocchi
12 ounces chicken sausage, sliced into 1/2-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, cut into 1/2-inch half-moons
1 small red onion, cut into wedges
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley


Instructions

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
In a large bowl, combine the potato gnocchi, sliced chicken sausage, red bell pepper pieces, zucchini slices, and red onion wedges.
Drizzle the olive oil over the mixture. Sprinkle the dried Italian seasoning, garlic powder, salt, and black pepper evenly over the ingredients.
Toss everything together until the gnocchi, sausage, and vegetables are evenly coated with oil and seasonings.
Spread the mixture out in a single layer on the prepared sheet pan.
Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the gnocchi are golden and crispy and the vegetables are tender.
Remove the sheet pan from the oven. Sprinkle the grated Parmesan cheese over the hot gnocchi and sausage mixture.
Garnish with chopped fresh parsley before serving.
