A simple and delicious one-pan meal featuring crispy gnocchi, savory chicken sausage, and roasted vegetables, all baked together for an easy weeknight dinner.
Ingredients
1 pound potato gnocchi
12 ounces chicken sausage, sliced into 1/2-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini, cut into 1/2-inch half-moons
1 small red onion, cut into wedges
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the potato gnocchi, sliced chicken sausage, red bell pepper pieces, zucchini slices, and red onion wedges.
Drizzle the olive oil over the mixture, then sprinkle with garlic powder, dried Italian seasoning, salt, and black pepper.
Toss everything together until the gnocchi, sausage, and vegetables are evenly coated with oil and seasonings.
Spread the mixture in a single layer on a large rimmed baking sheet.
Bake in the preheated oven for 20 to 25 minutes, stirring halfway through, until the gnocchi are golden and crispy and the vegetables are tender.
Remove the sheet pan from the oven and sprinkle the grated Parmesan cheese evenly over the top.
Return to the oven for an additional 2 to 3 minutes until the cheese melts.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
