Description

A quick and easy sheet pan dinner featuring cheese tortellini, fresh vegetables, and Italian sausage, all roasted together for a flavorful and satisfying meal.


Ingredients

1 pound cheese tortellini, fresh or refrigerated
12 ounces Italian sausage, casings removed
1 medium red bell pepper, sliced into strips
1 medium yellow bell pepper, sliced into strips
1 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
3 tablespoons olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh basil


Instructions

Preheat the oven to 400°F (200°C).
On a large sheet pan, spread out the Italian sausage, breaking it into small chunks with your hands or a spoon.
Roast the sausage in the oven for 10 minutes.
Meanwhile, in a large bowl, combine the sliced red bell pepper, yellow bell pepper, zucchini, and cherry tomatoes.
Add olive oil, dried Italian seasoning, garlic powder, salt, and black pepper to the vegetables. Toss well to coat evenly.
After the sausage has roasted for 10 minutes, remove the sheet pan from the oven and add the seasoned vegetables around the sausage.
Add the fresh cheese tortellini to the sheet pan, distributing it evenly among the sausage and vegetables.
Toss everything gently on the sheet pan to combine and coat with the juices and oil.
Return the sheet pan to the oven and roast for an additional 15 minutes, until the vegetables are tender and the tortellini is cooked through.
Remove the sheet pan from the oven and sprinkle the grated Parmesan cheese and chopped fresh basil over the top.
Serve warm directly from the sheet pan.
