A simple and flavorful sheet pan dinner featuring juicy chicken sausage, roasted potatoes, bell peppers, and onions, all cooked together for an easy weeknight meal.
Ingredients
1 pound chicken sausage links, sliced into 1/2-inch pieces
1 pound baby red potatoes, halved
2 medium red bell peppers, sliced into 1/2-inch strips
1 large yellow onion, sliced into 1/2-inch strips
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby red potatoes, sliced red bell peppers, and sliced yellow onion.
Add 2 tablespoons of olive oil, garlic powder, smoked paprika, dried oregano, salt, and black pepper to the vegetables. Toss well to coat evenly.
Spread the seasoned vegetables evenly on a large sheet pan.
Drizzle the remaining 1 tablespoon of olive oil over the sliced chicken sausage pieces and toss to coat.
Arrange the chicken sausage pieces on the sheet pan with the vegetables in a single layer.
Place the sheet pan in the preheated oven and roast for 25 to 30 minutes, stirring halfway through, until the potatoes are tender and the sausage is browned.
Remove from the oven and sprinkle chopped fresh parsley over the dish.
Serve warm.
