Ingredients
1 pound ground beef
1 medium yellow onion, diced
1 medium green bell pepper, diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1/2 teaspoon chili powder
2 tablespoons vegetable oil
1 cup shredded cheddar cheese
4 large flour tortillas
1/2 cup sour cream
1/4 cup chopped fresh cilantro
Instructions
Preheat the Blackstone griddle to medium-high heat.
Add 1 tablespoon of vegetable oil to the griddle and spread it evenly.
Add the diced onion and green bell pepper to the griddle and sauté for 3-4 minutes until softened.
Push the vegetables to the side of the griddle and add the remaining 1 tablespoon of vegetable oil.
Add the ground beef to the griddle and break it apart with a spatula.
Add minced garlic, salt, black pepper, smoked paprika, and chili powder to the beef.
Cook the beef mixture for about 7-8 minutes, stirring occasionally, until the beef is fully cooked and browned.
Mix the sautéed vegetables into the cooked ground beef evenly on the griddle.
Place the flour tortillas on the griddle to warm for about 1 minute per side.
Spoon the ground beef and vegetable mixture onto each warmed tortilla.
Sprinkle shredded cheddar cheese over the beef mixture on each tortilla and allow it to melt for 1-2 minutes.
Remove the tortillas from the griddle and top each with a dollop of sour cream and a sprinkle of chopped fresh cilantro.
