A hearty and healthy one-pot meal combining protein-rich quinoa, savory chicken sausage, sweet roasted sweet potatoes, and nutrient-packed kale. Perfect for a quick and satisfying dinner.
Ingredients
1 tablespoon olive oil
1 pound chicken sausage, sliced into 1/2-inch pieces
1 medium sweet potato, peeled and diced into 1/2-inch cubes
1 small yellow onion, diced
3 cloves garlic, minced
1 cup quinoa, rinsed
2 cups low-sodium chicken broth
4 cups kale, stems removed and leaves chopped
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1/2 teaspoon salt
Instructions
Heat olive oil in a large deep skillet or pot over medium heat.
Add the sliced chicken sausage and cook for 5 minutes, stirring occasionally, until browned. Remove sausage from the pot and set aside.
In the same pot, add diced sweet potato and onion. Cook for 5 minutes, stirring occasionally, until the onion is translucent and sweet potato starts to soften.
Add minced garlic, smoked paprika, dried thyme, salt, and black pepper. Stir and cook for 1 minute until fragrant.
Add rinsed quinoa to the pot and stir to combine with the vegetables.
Pour in the chicken broth and bring the mixture to a boil.
Reduce heat to low, cover the pot, and simmer for 15 minutes.
Remove the lid and stir in the chopped kale and cooked chicken sausage.
Cover and cook for an additional 5 to 7 minutes until the kale is wilted and quinoa is tender.
Remove from heat and let sit covered for 5 minutes before serving.
