One Pot Pasta Erdnuss (Peanut Pasta)

Description

A creamy, flavorful one pot pasta dish with a rich peanut sauce, perfect for a quick and satisfying meal.


Ingredients

300 grams dried spaghetti
4 cups water
1 cup coconut milk
3 tablespoons creamy peanut butter
2 tablespoons soy sauce
1 tablespoon lime juice
1 tablespoon brown sugar
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 small red chili, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup chopped roasted peanuts
1/4 cup chopped fresh cilantro


Instructions

In a large pot, combine the dried spaghetti, water, coconut milk, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, chopped red chili, salt, and black pepper.
Place the pot over medium-high heat and bring the mixture to a boil, stirring frequently to prevent the pasta from sticking.
Once boiling, reduce the heat to medium and simmer, stirring occasionally, until the pasta is cooked al dente and the sauce has thickened, about 12 to 15 minutes.
If the sauce becomes too thick before the pasta is fully cooked, add a little more water as needed.
Remove the pot from heat and stir in the vegetable oil until well combined.
Serve the pasta hot, garnished with chopped roasted peanuts and fresh cilantro.
