A simple and delicious one pot pasta recipe without any cheese, perfect for a quick and comforting meal.
Ingredients
12 ounces uncooked spaghetti
1 can (14.5 ounces) diced tomatoes with juice
4 cups vegetable broth
1 medium onion, thinly sliced
4 cloves garlic, thinly sliced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
2 tablespoons olive oil
Salt, to taste
Freshly ground black pepper, to taste
1/4 cup chopped fresh basil leaves
Instructions
In a large pot, combine the uncooked spaghetti, diced tomatoes with their juice, vegetable broth, sliced onion, sliced garlic, dried oregano, dried basil, red pepper flakes, and olive oil.
Bring the mixture to a boil over high heat.
Reduce heat to medium and simmer, stirring frequently to prevent the pasta from sticking, until the pasta is cooked al dente and most of the liquid has been absorbed, about 10 to 12 minutes.
Season with salt and freshly ground black pepper to taste.
Remove from heat and stir in the chopped fresh basil leaves.
Serve immediately.
