Description
A warm and comforting apple muffin oatmeal that combines the wholesome goodness of oats with the sweet, spiced flavors of apple muffins. Perfect for a hearty breakfast or snack.
Ingredients
1 cup old-fashioned rolled oats
2 cups water
1 medium apple, peeled, cored, and diced
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon brown sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup milk
1 tablespoon chopped walnuts
1 tablespoon raisins
Instructions
In a medium saucepan, bring 2 cups of water to a boil.
Add the rolled oats, diced apple, ground cinnamon, ground nutmeg, brown sugar, and salt to the boiling water.
Reduce heat to medium-low and simmer, stirring occasionally, for about 7-8 minutes until the oats are tender and the mixture thickens.
Remove the saucepan from heat and stir in the vanilla extract and milk until well combined.
Divide the oatmeal evenly between two bowls.
Top each bowl with chopped walnuts and raisins.
Serve warm.
