Ingredients
1 pound ground turkey
2 tablespoons olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 medium zucchini, diced
1 red bell pepper, diced
1 cup mushrooms, sliced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 cups fresh spinach, roughly chopped
1/4 cup grated Parmesan cheese
Instructions
Heat olive oil in a large skillet over medium heat.
Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and cook for 30 seconds until fragrant.
Add ground turkey to the skillet, breaking it apart with a spatula. Cook for 6-8 minutes until browned and no longer pink.
Stir in diced zucchini, red bell pepper, and sliced mushrooms. Cook for 5-6 minutes until vegetables are tender.
Season the mixture with dried oregano, dried basil, smoked paprika, salt, black pepper, and red pepper flakes. Stir well to combine.
Add chopped spinach and cook for an additional 2 minutes until wilted.
Remove skillet from heat and sprinkle grated Parmesan cheese over the top.
