A hearty and comforting Jiffy corn casserole layered with seasoned ground beef, perfect for a family dinner or potluck. This easy-to-make casserole combines savory ground beef with a creamy corn mixture topped with melted cheese.
Ingredients
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1 (8.5-ounce) box Jiffy corn muffin mix
1 (15-ounce) can whole kernel corn, drained
1 (14-ounce) can creamed corn
1 cup sour cream
2 large eggs
1/2 cup unsalted butter, melted
1 cup shredded cheddar cheese
Instructions
Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned and the onion is tender, about 7-8 minutes. Drain any excess fat.
Season the beef mixture with salt, black pepper, and chili powder. Stir well and remove from heat.
In a large mixing bowl, combine the Jiffy corn muffin mix, whole kernel corn, creamed corn, sour cream, eggs, and melted butter. Stir until well blended.
Spread the cooked ground beef mixture evenly in the bottom of the prepared baking dish.
Pour the corn mixture over the ground beef layer and spread evenly.
Sprinkle the shredded cheddar cheese evenly on top of the corn mixture.
Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
Remove from the oven and let cool for 5 minutes before serving.
