A hearty and flavorful ground beef dinner made without any dairy ingredients. This simple recipe combines ground beef with vegetables and spices for a satisfying meal that’s perfect for weeknights.
Ingredients
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 medium bell pepper, diced
2 medium carrots, peeled and diced
1 cup green beans, trimmed and cut into 1-inch pieces
1 can (14.5 ounces) diced tomatoes, undrained
1 cup beef broth
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
2 tablespoons chopped fresh parsley
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.
Drain any excess fat from the skillet.
Add the diced bell pepper, carrots, and green beans to the skillet. Stir to combine and cook for 5 minutes until the vegetables begin to soften.
Stir in the diced tomatoes with their juice, beef broth, dried oregano, ground cumin, smoked paprika, salt, black pepper, and crushed red pepper flakes if using.
Bring the mixture to a simmer, then reduce heat to low and cover. Cook for 10 minutes, stirring occasionally, until the vegetables are tender and the flavors are well combined.
Remove from heat and stir in the chopped fresh parsley.
Serve hot as a complete dinner.
