Easy and convenient freezer meals using canned chicken that you can prepare ahead of time and enjoy later. These meals are perfect for busy days when you want a quick, homemade dinner without the hassle.
Ingredients
2 cans (12.5 ounces each) canned chicken, drained
2 cups cooked rice
1 cup frozen mixed vegetables, thawed
1 cup shredded cheddar cheese
1 cup cream of mushroom soup
1/2 cup sour cream
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped celery
Instructions
Preheat the oven to 350°F (175°C).
In a medium skillet, heat olive oil over medium heat. Add chopped onion and celery and sauté for 5 minutes until softened.
In a large mixing bowl, combine the drained canned chicken, cooked rice, thawed mixed vegetables, sautéed onion and celery, shredded cheddar cheese, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
Transfer the mixture into a 9×13-inch baking dish and spread evenly.
Cover the dish tightly with aluminum foil.
Bake in the preheated oven for 30 minutes until heated through and bubbly.
Remove from oven and let cool completely before portioning into freezer-safe containers or bags.
Label and freeze the meals. To reheat, thaw overnight in the refrigerator and bake at 350°F (175°C) for 20 minutes or until warmed through.
