Description

A simple and flavorful crock pot recipe featuring tender chicken breasts cooked with colorful bell peppers and onions. Perfect for an easy weeknight dinner with minimal prep.


Ingredients

4 boneless, skinless chicken breasts
2 medium red bell peppers, sliced into strips
2 medium green bell peppers, sliced into strips
1 large yellow onion, sliced into strips
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup low sodium chicken broth
2 tablespoons olive oil


Instructions

Place the chicken breasts in the bottom of the crock pot in a single layer.
Add the sliced red bell peppers, green bell peppers, and yellow onion evenly over the chicken.
Sprinkle the minced garlic, dried oregano, dried basil, salt, and black pepper over the vegetables and chicken.
Pour the chicken broth and olive oil evenly over all the ingredients in the crock pot.
Cover and cook on low for 4 hours, or until the chicken is cooked through and the vegetables are tender.
Once cooked, use tongs to carefully remove the chicken breasts and slice or shred as desired.
Serve the chicken topped with the peppers and onions from the crock pot.
