Description

A quick and easy creamy one pot orzo recipe that’s perfect for a comforting weeknight meal. Tender orzo pasta cooked in a flavorful broth with garlic, onion, and Parmesan cheese, resulting in a rich and creamy dish.


Ingredients

1 tablespoon olive oil
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 cup orzo pasta
2 1/2 cups low sodium chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley


Instructions

Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until softened and translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the orzo pasta to the pot and stir to coat it with the oil, onion, and garlic mixture.
Pour in the chicken broth and bring the mixture to a boil.
Reduce heat to low and simmer uncovered for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Stir in the heavy cream, grated Parmesan cheese, salt, and black pepper.
Cook for an additional 2-3 minutes, stirring frequently, until the sauce is creamy and heated through.
Remove from heat and stir in the chopped fresh parsley.
Serve immediately.
